Based on the Cognito recipe posted on the Evening Standard Website
  • 2 Measures of Courvoisier VSOP Exclusif
  • 4 Measures of Apple Juice
  • 2 Sprigs of Fresh Mint
  • 1/3 Bar Spoon of Sugar Syrup
  • 1 Lemon
  • 3 Thin Slices of Apple to Garnish
  • 1 Sprig of Fresh Mint to Garnish
  • Muddler
  • Ice Crusher
  • Bar Spoon
  • Thick Tall Soda Glass
  • Tall Drinking Straw
Cut the Lemon into quarters and add 2 to the Soda Glass along with the mint leaves from the 2 sprigs. Add a 1/3 of a Bar Spoon of Sugar Syrup to the glass. Use the Muddler to crush and mix the sugar syrup and mint with the lemon.
Add the Crushed Ice, ensuring it is heaped over the top of the glass. Now add the Courvoisier VSOP Exclusif to the glass, along with the Apple Juice. Use the bar spoon to stir the ingredients together.
If the ice appears below the top of the glass, add some more crushed ice. Add the Drinking Straw, the Apple Slices and a sprig of fresh mint to ganish and serve.
